An Ode to Autumn: Fall in Love with this Overnight Oats Recipe

It’s early November and many people have already started playing Mariah Carey’s “All I Want for Christmas” on repeat. Resist the urge to fast-forward through fall. Stop and savor the delicious seasonal flavors unique to this season before winter arrives in earnest. This overnight oats recipe combines the textures and flavors of autumn with a bit of extra plant-based protein by way of chia seeds and hemp hearts.

When I came up with this recipe, I knew it would have to be really good, since I typically don’t like eating the same thing everyday. I am happy to report that I have succeeded on that front: this tastes amazing. Beyond that, many of the people I admire in the beauty/wellness space have said that they regularly repeat meals to make sure they are meeting their daily nutritional requirements. This totally makes sense. Variety can mean potentially eating too much or not enough of crucial ingredients.

Repeating meals also eliminates the issue of decision fatigue. Having to make a lot of choices can lead us to make poor ones due to stress, impulse, or a lack of time to consider all the options. Many high-powered leaders such as Mark Zuckerberg have opted to streamline things like daily outfit choices to save their brainpower for making important decisions.

In this recipe, I have married the portion control, repetition, and forethought that comes from meal prepping with the fun and whimsy of making each morning a celebration of the fall season. This morning represents the fourth day I’ve had the oats since making a batch of five a few days ago. Amazingly, I am still not tired of them. I actually look forward to eating them each morning.

The Recipe:

Fall overnight oats

Yields1 Serving

 ¼ cup Organic Steel Cut Oats
 1 cup Organic plant based milk
 1 tsp Hemp hearts
 1 tsp Chia seeds
 1 tsp Organic Almond butter or peanut butter
 ½ cup Finely chopped organic apple
 1 tbsp Lemon juice
 ½ tsp Ground cinnamon
 ¼ tsp Ground nutmeg
 1 tsp Maple syrup
 ¼ tsp Vanilla extract
 1 tbsp Chopped pecans or walnuts

Roughly chop nuts and set aside.

Finely chop apples and place in a bowl. Cover with lemon juice and stir. Add cinnamon and nutmeg. Set aside.

Add dry ingredients (oats, chia seeds, hemp hearts, chopped nuts) to container. Top with milk alternative and vanilla. Shake well.

Add almond/peanut butter and top with apple mixture. Seal container and allow oats and chia to absorb milk alternative. Enjoy!
